Ingredients
Simple Syrup:
- 1 cup water
- 1/2 cup sugar
- 2 tbsp dried elderflowers
Lemonade:
- Juice of 3 lemons, about 1/3 cup
- 1 large peeled cucumber, cut into chunks
- 6 cups water
Begin the simple syrup by combining 1 cup water and 2 tbsp elderflowers in a small pot. Bring to a simmer, then remove from heat and allow to steep during the next steps.
Add cucumber pieces to a blender with 1 cup of the water, and blend. Carefully strain the mixture so there is as little pulp as possible. Add cucumber juice to a pitcher. Juice the lemons, and add to the cucumber juice. Add remaining 5 cups of water to the pitcher.
To finish the simple syrup, strain out the elderflowers, pressing the water out. Add the elderflower water back into the pot, and add sugar. Heat the mixture and stir slightly until sugar is dissolved. Set syrup aside until cool, then add to the lemonade.
Serve chilled over ice. Try garnishing with a slice of lemon or lime, a cucumber ribbon, or rimming the glass with your favorite sugar or salt.
