Ingredients:
- 2 TBS vegetable oil
- 2 lbs lean ground beef or other protein (optional)
- 3 (14.5 oz) cans chopped, peeled tomatoes, with liquid
- 2 (15.25 oz) cans red kidney beans (or other desired variety), rinsed and drained or cooked dried beans of choice*
- Allspicery Chili Kit
- Salt
Directions:
- Remove the whole chile from the kit and place in a bowl. Pour boiling water over chile to cover and let sit for 10-15 minutes to rehydrate. Remove stem and seeds and chop roughly.
- If using protein, in a medium stock pot, heat oil over medium/low heat. Add ground beef or other protein, cooking until browned.
- Add tomatoes with liquid, along with all the chili spices - including cinnamon sticks - and chopped chile to taste. Cover and simmer 45 minutes.
- Stir in beans, cooking an additional 15 minutes. Add salt to taste.
- Remove bay leaves and cinnamon sticks before serving.
*You can expect 1 cup of dried beans to yield about 3 cups cooked beans. One pound of dried beans (which is about 2 cups) will yield about 6 cups cooked beans. One 15-oz can of beans equals about 2 cups cooked beans.
Serves 6-8
Suggested Variations:
- Add 1 cup of beer when adding spices
- Season to taste with our Espresso Salt, Lime Salt or Chile Lime Salt.
- Increase the heat by adding cayenne, a hotter chile or our Scorpion Pepper Death Salt!
- Add a teaspoon of Smoked Paprika or Chipotle Chile Flakes for added smoke
- Top with Habanero Sugar
- Sauté 1-2 cloves of fresh garlic (minced) with ground meat
