Ingredients
• 1 large yellow or white onion, medium dice
• 1 pound fresh carrots, medium dice
• 3 cloves garlic, (1/2 teaspoon if using dry)
• 1 tsp fresh ginger (1/2 teaspoon if using dry)
• 2 cups vegetable stock
• 1 tsp freshly ground Grains of Paradise, plus more for garnish
• 2-3 TBSP olive oil or butter
• 1/2 tsp salt
• 3 TBSP sour cream, plus more for garnish
Instructions
1. In a large pot over medium-low heat, warm 2 tablespoons of oil or butter. Add carrots, onion, Grains of Paradise, and salt. Cook for 5-7 minutes until soft but not brown.
2. Remove from pan.
3. Add remaining 1 tablespoon of oil or butter and cook the ginger and garlic 3-5 minutes until soft but not brown.
4. Reintroduce carrots and onion, add stock to pot. Cover and bring to boil.
5. Once carrots are tender enough to be stabbed through with a fork, turn off heat.
6. Pulse in a standing blender, then run on high till smooth, once smooth add sour cream. (You can also use an immersion blender right in the pot.)
7. Taste the soup, adding more salt if needed.
8. Serve in a bowl with a dollop of sour cream and a generous portion of fresh cracked Grains of Paradise.
