Ingredients:
- 2 egg whites, at room temperature
- ¼ tsp cream of tartar
- ⅛ tsp salt
- 3 oz flavored sugar of choice*
*Note: if using large grain sugar, grind in coffee grinder or food processor to fine powder.
Directions:
Heat oven to 225 degrees. Line a baking sheet with parchment paper and prepare a pastry bag with a ½” plain or star tip (or use a zip top plastic bag with a corner cut off).
Use an electric mixer to beat egg whites until foamy soft peaks form. Add cream of tartar and salt. Continue beating until whites begin to hold stiff peaks. Gradually add sugar. Once all sugar is added, continue beating until stiff glossy peaks form.
Fill prepared bag with meringue mixture. Pipe mounds each about an inch wide and tall – or into any shape you prefer.
Bake meringues until fully set, about 90 minutes. Turn oven off and prop door open slightly with a wooden spoon and allow meringues to sit in oven for another hour.
