CAKE
- 1 15-oz can pumpkin puree
- 4 large eggs
- ¾ cup vegetable oil
- 2 teaspoon vanilla extract
- 2 cups flour
- 1 cup granulated sugar
- 1 cup light brown sugar
- 1 tablespoon pumpkin pie spice
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
STREUSEL TOPPING
- 1 cup brown sugar
- 1 cup flour
- 2 teaspoon pumpkin pie spice
- 8 tablespoons butter, melted
PREPARATION
1. Preheat oven to 350 degrees.
2. Grease two 9”x5” loaf pans.
3. Beat pumpkin, eggs, oil, and vanilla in a stand mixer or in a large bowl with a hand mixer until well combined.
4. In a separate bowl whisk together 2 cups flour, 1 cup brown sugar, 1 cup sugar, 1 tbsp pumpkin pie spice, 2 tsp baking powder, 1 tsp baking soda and 1 tsp salt.
5. Slowly pour dry ingredients into wet ingredients and mix until well combined.
6. Pour batter into greased loaf pans.
7. To make the streusel, combine brown sugar, flour, pumpkin pie spice in a bowl.
8. Drizzle butter over the mixture and stir until it is the consistency of wet sand.
9. Sprinkle the streusel evenly over the 2 pans of batter.
10. Bake for 45 minutes, turning pans hat the 15-minute mark, through cooking.
11. Allow to cool at least 10 minutes on a cooling rack.
