Roasted Cauliflower and Aleppo White Beans

Roasted cauliflower and Aleppo beans are a match made in culinary heaven. The cauliflower gets crispy and caramelized, bringing out its natural sweetness, while the Aleppo beans add a delightful kick with their mild heat and unique flavor. Together, they create a dish that's not only tasty but also packed with nutrients. It's a perfect combo for anyone looking to spice up their meals with something healthy and delicious.

Ingredients: 

Instructions: 

  1. Preheat oven to 350
  2. Wash cauliflower and cut into bite sized florets 
  3. Dice onions, garlic, and jalapeño (optional) 
  4. Place cauliflower on baking sheet, add garlic powder, cumin, smoked paprika, salt, oil, and half of diced ingredients 
  5. Bake cauliflower at 350 in oven until fork tender (about 30-40 minutes)
  6. While the cauliflower is baking, add rest of chopped onion, garlic and jalepeno to a pan 
  7. Cook until onions are translucent 
  8. Add beans to the pan and cook for a few minutes, stirring occasionally 
  9. Add Aleppo pepper and salt to beans, cook for 10 minutes 
  10. Serve cauliflower and beans with hummus or your favorite rice, add a little lemon juice for extra zing (optional)
