Ingredients:
- 1 head cauliflower, cut into florets
- 3 cloves of garlic, diced
- 1/2 onion
- 2 teaspoons olive oil
- 1 can of white beans
- 1/4 jalapeño, diced
- 3 teaspoons garlic powder
- 2 teaspoons cumin powder
- 1 teaspoon smoked Spanish paprika
- 2 teaspoons Aleppo pepper
Instructions:
- Preheat oven to 350
- Wash cauliflower and cut into bite sized florets
- Dice onions, garlic, and jalapeño (optional)
- Place cauliflower on baking sheet, add garlic powder, cumin, smoked paprika, salt, oil, and half of diced ingredients
- Bake cauliflower at 350 in oven until fork tender (about 30-40 minutes)
- While the cauliflower is baking, add rest of chopped onion, garlic and jalepeno to a pan
- Cook until onions are translucent
- Add beans to the pan and cook for a few minutes, stirring occasionally
- Add Aleppo pepper and salt to beans, cook for 10 minutes
- Serve cauliflower and beans with hummus or your favorite rice, add a little lemon juice for extra zing (optional)
