Spiced Summer Tomato Tart is a delicious way to highlight the last of those summer tomatoes, using pantry herbs and spices you probably already have!
Ingredients:
- 1 pre-made pie crust, thawed (we like French Picnic)
- 4 ounces Jarlsberg (or other mild Swiss) cheese, coarsely shredded
- 1/8 teaspoon granulated garlic
- 1/8 teaspoon freshly grated nutmeg
- 1/2 teaspoon dried thyme
- 1/8 teaspoon freshly ground pepper
- 2-3 large Heirloom or vine-ripened tomatoes
- 1 tablespoon basil olive oil
- 1/8 teaspoon sea salt
- 1-2 medium fresh basil leaves
Directions:
1. Preheat oven to 400 degrees.
2. Press the pie crust into a round pan with removable bottom, and slightly up the sides
3. Spread the cheese evenly over the pie crust and then sprinkle with granulated garlic, nutmeg, thyme, and pepper
4. Cut the tomatoes into even slices, about 1/4 thick. Drain on paper towels for 15 minutes. Arrange the tomato slices over the cheese in an overlapping pattern.
5. Drizzle the olive oil over the tomatoes.
6. Bake 45-50 minutes until crust is golden and the tomatoes are soft but retain their shape.
7. After removing from the oven, add fresh basil and a pinch of sea salt
8. Let the tart cool for at least 15 minutes before slicing and serving.
