Coconut sugar is a minimally processed natural sweetener made from the crystallized sap of the coconut palm tree, retaining a caramel flavor and some nutrients like iron, zinc, and potassium, plus fiber (inulin). It can be used as a 1:1 replacement for other sugars in baking and drinks, although it is not quite as sweet as cane sugar.
